Grain flattening is applied to make flakes out of grains. While flattening special attention is paid to the thickness of flakes, since this parameter determines cooking time.
The unique flattening technology used by Research and Production Company Agro-Simo-Mashbud enables to improve grain taste and enhance food value of the flake carbohydrate and protein complexes. ПС machines are used for grain flattening and hulling kernels in the production of oats, pearl barley, fine barley, corn, wheat, millet, rice, buckwheat and other kinds of flakes.
After flattening, flakes drying is an important process stage. Drying modes are critical for the strength of the flakes, their fragility and output of the whole cereal plate. To solve this problem Research and Production Company Agro-Simo-Mashbud has developed various designs of grain, cereal and flake dryers.
Main operations during flakes production consist of grain preliminary control, its drying, steaming and short-term softening. After that steamed grain will be crushed and the obtained flakes will be dried. These operations help increasing nutrition value of groats (partial starch gelatinization and dextrin generation take place), improving of groats flavor and assimilability improving. Duration of cooking of such product is about 2,0-2,2 times less than groats, which is received for flakes production.
Oat flakes “Hercules” are produced from extra-class oatmeal by its crushing until 0,5…0,7 mm thickness. It is required to conduct preliminary control of groats just before its processing to flakes in order to separate broken groats and miss impurities, because flakes shall meet high quality requirements. Then groats will be dried until humidity more than 12% in that case if drying equipment doesn’t ensure humidity down lead until 11,8…11,5%. Prior to crushing groats will be steamed and softened during three minutes, that will lead to uniform humidity distribution and increase in softness of groats.
Crushing of prepared kernel is performed using innovative flattening machines with two multiple rolls with smooth surface, which run towards to one another. Warm and humid flakes after crushing will be dried and after that cooled. After cooling they will be packed in carton boxes with capacity 0,25…1,0 kg.
Along with “Hercules” flakes from oat kernel there are produced leafed flakes and flatten oatmeal. Flatten oatmeal is usually called fast-cook groats. Production process of flatten groats is different only by mode of kernel flattening – kernel surface as a result of flattening shall have stamp of rolls from the both sides. Flatten kernel has 0,2… 1,5 mm thickness.
Process and mode of leafed flakes production, which are produced from extra-class oat kernel, consist in that after additional polishing of kernel, it is the same as production of “Hercules” flakes. Also flakes can be produced from large numbers of pearl barley groats (№1 and №2), “Poltavskaya” wheat groats, pea, buckwheat and rice groats, etc.
