Wheat, like other cereals, is affected by many diseases, as a result of which the yield decreases and its quality deteriorates. Mineral dusts and microorganisms move into finish product while grain processing. It leads to its increased bacterial contamination. Flour and cereal become unready to safety transportation and storage. The development of microflora is so intensive that these products become unsuitable even during transportation by bacterial indicators. This fact does not allow them to be used in food production, especially for children under the age of 1 year. One of well known, dangerous bacterium for mills and bakeries is Bacillus mesentericus.
Last years, the grain hasn’t been washed before milling. It’s moisturised only. Therefore Bacillus mesentericus moves into the flour while milling. Bacterial growth carries out so fact in favourable conditions. The best conditions for the bacterial growth are temperature of about 40 °C, the presence of moisture, nutrient medium, low acidity. Its cell can`t be alive at a temperature of 80 °C, but its spores can live at the temperature of 120 °C. That why the microbes died when baking bread, but spores stay alive.
Acidic environment inhibits development of Bacillus mesentericus. Therefore, this bacterium can`t develop good in rye bread. If the bread has Bacillus mesentericus, it has unpleasant odour, sticky consistency and afterword it has black holes with rotten odour.
In this regard, it is of great importance to comply with the requirements of sanitary and technological instructions acting in the elevators, mills, bakery industries, as well as in trade.
One of the most effective methods to eliminate these disadvantages is the use of a Washer КВД-1. Besides removing different impurities from the grain, this machine are the important initial stage of complex water-heat treatment of grain in the process of hydro separation and dipping.
Our development of modes at each stage of water-heat treatment determines changes in the technological properties of grain in this case. The main process of hydro separation carries out in special chamber, where the separation of impurities is actually achieved.
The final stage of this washer is the grain dehydration. In the centrifugal column of the washing machine, moisture is separated as a result of the combined action of pressing and drying the grain by air.
